JOB DESCRIPTION – HEAD OF FOOD AND BEVERAGES



The Head of Food and Beverages is responsible for the overall dining experience of guests in the Hotel. The Head of Food and Beverages is a member of the Culinary Management Team of the Hotel and reports to the Assistant General Manager.                                       




  • Create and maintain menus that satisfy guests.

  • Manages the food and beverage inventory of the restaurants and bars.

  • Forecast, plan and control the ordering of food and beverages for the restaurants and bars.

  • Manage food and beverage costs.

  • Set and uphold menu standards.

  • Maintains compliance with the Hotel’s culture and practices, cost projections and mission statements.

  • Create event-specific menus for banquets, private catering, international holidays and other events.

  • Create tailor-made menus that cater to guests with special diet needs like diabetics, vegetarians, lactose-intolerants, etc.                                                                                       

  • Assist with management and coordination of events of all occasions.

  • Assist with Restaurant and Bar staff management, guest interactions, office administration duties, vendor communications and labor costs.

  • Ensure operational standards are met in the areas of sanitation codes and laws, food storage and loss prevention.

  • Update and build on new and trending industry practices and standards for food and beverages for the Restaurants and Bars.




Required Skills or Experience



QUALIFICATIONS




  • Degree from a Culinary Arts Institution or Equivalent. A Business Administration degree will be a plus.

  • At least 5 years’ experience in field or similar role.
